Glucavamorin is a bacterial enzyme preparation used for saccharification of partially cleaved polymeric starch molecules, while glucoamylase sequentially hydrolyzes -1,4- and -1,6-glycosidic bonds, cleaving off residues of glucose from non-reducing ends of starch molecules, dextrins, oligosaccharides, which is hydrolysis.
The use of a complex of enzyme preparations allows:
increase the efficiency of raw materials use due to deeper hydrolysis
reduce the duration of fermentation by 10-20 hours
stabilize the technological process
increase the alcohol yield by 1-4%
improve the quality of finished products
ensure the safe operation of equipment
improve the culture of production.
Instructions for use:
Dissolve the enzyme in a small amount of warm water (up to 60°C) - for one part of the raw material 4 parts of water, mix thoroughly. Add to liquefied wort at 63-68°C. Stir for a few minutes to maximize the saccharification of the wort. The saccharification time is 1.5 - 2 hours. Cool the mixture to room temperature, add yeast, stir and place in a warm place to ferment.
Dosage:
2 - 3 grams of enzyme per 1 kg of starch. The dosage increases with aging of the enzymes.
It is used in combination with the enzyme Amylosubtilin
